You may be interested in the research on the resource-based view and human capital management. Diversity as defined by EOE terms and in terms of Workplace Diversity are fairly standardized in the US, certainly other countries have such policies...or should probably.
Because workplace diversity in the US is defined by minority and disadvantaged groups as well as by race/ethnicity, the OB/HR and Labor Management areas might be of interest where they overlap SC/OM. I have seen some good research on migrant workers and usually find papers on the topic of diversity are defined by interpretation of labor laws and FLSA as applied to specific groups. I have not seen much in the area of OSCM and Workforce diversity, per se. Likely because incentives for workforce diversity are at the firm level (in defining the organization and therefore the benefits of the firm).
It might also be fitting for social impact or ethical and sustainable workforce development literature. Or do you mean, diversity of skills, or diversity of talents. OB-focused research like Kolbe's Conative Index is another way teaming or group diversity can be explored-in terms of capability strengths.
Interesting query, let me know if I can help you more if at all.
